The only difference between the white and the wholegrain tahini is that for this one we use hulled sesame seeds . The production methods and the wholesome benefits are very much the same. We make the white tahini to the original recipe transcribed in an anonymous 13th-century Arabic cookbook, Kitab Wasf al-Atima al-Mutada – by grinding the sesame between two stones. Its nutritious benefits have been known in our lands since forever and any household that’s serious about good food is bound to keep a jar of it in the pantry.
